Ingredients
Jerk Chicken:
4 jalapeños, halved and seeds removed
3 oz. whipped cream cheese
3 scallions, minced
4 slices rye or white bread
4 slices cheddar cheese
2 tablespoons butter
Turn on the oven broiler and place a rack no more than 6 inches from the heat source.
Line a baking sheet with aluminum foil. Add the jalapeños, cut side down. Broil 6–8 minutes, until blackened and flattened, rotating the pan halfway through.
Transfer jalapeños to a small bowl and cover tightly with foil to allow them to steam for a few minutes. Peel and discard the skins.
In a bowl, mix cream cheese and scallions. .
Take 2 slices of bread and top each with half the cream cheese mixture, 1 slice of cheese, half the jalapeños, and then a second slice of cheese. Cover with remaining slices of bread.
Generously smear both sides of each sandwich with butter. Heat a skillet and cook sandwiches until golden and crispy on both sides. (Alternatively, cook in a waffle maker until golden.)
